The Ten Commandments for Better Hygiene
- Before touching any food items always wash your hands in hot soapy water
- Wash your hands, any equipment, plates and all work surfaces thoroughly with hot soapy water after they have been in contact with raw meat, fish or poultry
- Wash your hands thoroughly after using the bathroom
- In health care and food hygiene environments always cover hair
- Do not work around food if you have any infection or infectious disease, including an infected wound or acute respiratory infection
- Always clean first, then rinse, then sanitise
- Keep fresh foods separate from each other. Use different surfaces and utensils when preparing each one, or ensure it is thoroughly washed between foods
- Prepare and serve food with as little physical contact as possible
- Wash fruits and vegetables thoroughly
- Keep unserved food covered at all times
Often the simplest actions can stop the cycle of infection in its tracks. Follow these ten steps and you can prevent the means by which an infectious agent can hide (reservoirs), and reduce the transmission to any susceptible hosts.
